Few food items could be more "seasonal" in the Victorian world than vegetables. While some vegetables and fruits were imported "out of season" from the Continent, these were often far more expensive than the same items in season "at home." Vegetable recipes, therefore, would nearly always be based upon what was available in the market or garden at the time. Today, thankfully, we can enjoy some of these delightful salad recipes at almost any time of the year!
