Preserving foods for the fall and winter was part of good housekeeping in Victorian days, regardless of which side of the Atlantic one was on. Although canning jars ("Mason jars") were invented in 1858, these still were not common in the Victorian household until nearly the turn of the century, so other methods were often used to preserve foods.
