Victorian Recipes:
Recipes from America

Home > Victorian Recipes > International Recipes > Recipes from America

There are plenty of "American" recipes throughout our cooking section. This page, however, brings you articles from British publications that treat American cookery as yet another "foreign" type of cuisine.

Some Neglected Articles of Food, by Dora de Blaquière (Cassell's Family Magazine, 1877)
Some American foods, including "mush," Indian meal pudding, ginger-cake, hoe-cake, and various recipes for pumpkin.

Some Favorite American Dishes (Cassell's Family Magazine, 1879)
"Oysters friend, roast, and broiled are, I think, peculiarly American modes of cooking... A fried oyster is one of the most delicious morsels that ever tickled the palate of an epicure."

American Breakfasts, by Catherine Owen(Cassell's Family Magazine, 1880)
From beefsteak to stewed clams, American breakfasts astonished international visitors... and here are some recipes!

An American Tea-Table, by Catherine Owen(Cassell's Family Magazine, 1880)
A guest traveling in America will come to understand in time that "supper" is the same meal as "tea" in New York--but the reader of this article may have a bit of difficulty sorting out what is meant by dinner, supper or tea!

American Dinners and How They Are Prepared, by Catherine Owen (Cassell's Family Magazine, 1881)
From "punkin" pie to the ever-present salver of celery, a British author looks at the American dinner table.

How to Cook a Pumpkin (Cassell's Family Magazine, 1883)
This article explains not only how to cook this "American favourite" (unfamiliar to many in Britain), but how to plant and grow them. It offers, of course, a recipe for pumpkin pie, as well as pumpkin tart, soup, Buckland stew and trifle.

American Cookery, by Darley Dale (Girl's Own Paper, 1884)
Griddle Cakes, Pan Cakes, Buckwheat Cakes, Baltimore Biscuits, Pies of every description (including "squash pie"), and the syrups to serve them with, including "French Honey" (warning: not for dieters!).

How American Bread Is Made (Cassell's Family Magazine, 1885)
One might ask what American bread is, as opposed to any other sort! This article offers recipes for Rice Bread, Buttermilk Bread and Muffins, Boston Brown Bread, Potato Scones, Soda Biscuits, and Corn Bread, to name just a few "American" varieties.

How to Make American Candies (Girl's Own Paper, 1898)
Tips on making cream nuts, nougat, tricoloured candy, creams, and chocolate marbles.
